Last weekend was a bisy one, still pakking for the big move and on top of that I decided to try out some new cupcake flavours. Spent friday night and saturday morning making oreo-, banana chocolate & caramel- lemon & coconut- and carrot cupcakes, all with different types of topping and fondant/marzipan decorations. I think I made around 120 cupcakes and brought them to all my friends to taste and to find out what their favorites were. the reason for making this many was because I was asked by my very good friend to make cupcakes for the Oslo World Festival meeting and if everything goes according to plan my cupcakes will be permanent fixture during the festival. Marzipan Flowers
I decided to to take a marzipan class to learn more about techniques and envoke my creative side. I truly enjoyed it and I can't wait to use all the techniques I learnt. I will also take a course in royal icing and basic cake decorating. My goal is now to bake atleast 1 cake per week. I will keep posting the results on the blogg.

Oreo Cupcakes
I've been making the same cupcakes so I decided to try out a new recipe: Oreo cupcakes :) I love the cookies so having them combined with cupcakes which is another one of my favorites, the result just had to be great - and trust me they were. They might even be my favorite kind. Here are some pictures

Banana Bread
I wasn't planning to bake anything this weekend but suddenly the urge came and I decided to make my first ever banana bread. I created my own recipe and I'm so happy about the result, it was goldenbrown, moist and delicious. Cupcakes & tarts
We went to a bbq party on Saturday and I had decided to bring some cakes. I spent most of Saturday morning making cupcakes, fruit tarts and macarons. I keep having troubles making the macarons, they never turn out the way I want them to, so I have realised that I need to order the KitchenAid attachemt that will grind the almonds really fine and I also realised that I need to beat the air out of the mixture, thank god there's always a next time. The best part of it all is that everybody enjoyed the cakes and the party was great fun. Here are som pictures....

The Result
The dinner was fab...everything went much better then expected. I hadn't made all of the dishes before so I knew it was going to be a challenge, but the result made all the preparations worth it!!! I made my first fondant cake, or rather a Red Velvet Cake with fondant cover. Here are some pictures from the dishes on my menu, minus the Pear salad - I was so hungry that I forgot to use the camera before I started eating..

3 days to go
I`m preparing a 7 course dinner for my stepdad on Saturday to celebrate him turning 60 yrs. I have already ordered fresh scallops, halibut and rack of lamb from Fjeldberg in Bygdøy Alle but I still need to go shopping for King crab, vegetables and herbs today. Here is my menu for the night:
1. Pear salad with caramelized walnuts, Roquefort and honey vinaigrette. Served with tiny Roquefort popovers.
2. Seared scallops with cauliflower puree & beurre blanc with dried fruits
3. King crab ravioli with a cream sauce
4. Sear-roasted halibut with roasted pepper puree & steamed green asparages
5. Braised rack of lamb with sweet potatoe puree & sauted mushrooms
6. White chocolate pannacotta with raspberry coulis, macaron with raspberry ganache and fresh chocolate coated strawberries.
7. Southern style Red Velvet Cake and pinsk raspberry meringue
I have alot to do so planning & organizing is crucial, hope everything goes as planned, can't wait to sit down and enjoy a long family dinner......:-)
